Homemade Applesauce

Ingredients
  • 3 to 4 lbs of peeled, cored and quartered apples. (Make sure you use a good cooking apple like Golden Delicious, Jonagold, Granny Smith, Fuji or Mcintosh)
  • 4 strips of lemon peel - use a vegetable peeler to strip 4 lengths
  • Juice of one lemon, about 3-4 Tbsp.
  • 3 inches of a cinnamon stick
  • 1/4 cup of dark brown sugar
  • Up to 1/4 cup of white sugar
  • 1 cup of water
  • 1/2 teaspoon of salt

Directions

  1. Put all ingredients into a large pot. Cover. Bring to a boil. Lower heat and simmer for 20 to 30 minutes.
  2. Remove from heat. Remove cinnamon sticks and lemon peels. Mash with potato masher.
  3. Ready to server, either hot or refrigerated. Delicious with vanilla ice cream or yogurt.
  4. Freezes easily, lasts up to one year in a cold freezer.
Your house will smell heavenly after making this dish!

Chunky Turkey-Vegetable Soup

Ingredients

  • 1 tablespoon olive oil 
  • 1 medium onion, finely chopped 
  • 2 garlic cloves, minced 
  • 2 tablespoons tomato paste 
  • 1 large sweet potato (about 12 ounces), peeled, quartered lengthwise, and thinly sliced 
  • 1 can (14.5 ounces) diced tomatoes with juice 
  • 1 can (14.5 ounces) reduced-sodium chicken broth 
  • 1/2 teaspoon dried crushed rosemary 
  • coarse salt and ground pepper 
  • 1 pound cooked turkey breast, cut into bite-size pieces 
  • 1 small head escarole (about 8 ounces), trimmed, leaves torn into bite-size pieces and washed well 
Directions

In a large saucepan with a lid, heat oil over medium. Add onion and garlic. Cook, stirring occasionally, until softened, about 5 minutes. Stir in tomato paste. 


Add sweet potato, tomatoes and their juice, broth, 1 cup water, and rosemary; season with salt and pepper. Bring to a boil, and reduce to a simmer. Cover; cook until potato is tender, 12 to 15 minutes. 

Stir in turkey; add escarole in two batches, waiting for the first batch to wilt before adding the second. Cover, and simmer just until turkey is heated through. 

Season with salt and pepper. Serve.

Banana Chocolate Chip Baked Oatmeal Singles

Ingredients
  • 3 cups old-fashioned oats 
  • 1/2 cup packed brown sugar 
  • 2 tsp. baking powder 
  • 1/2 tsp. salt 
  • 2 egg whites 
  • 1 egg 
  • 1 1/4 cup skim milk 
  • 3/4 cup mashed bananas 
  • 1 tsp. vanilla extract 
  • 3/4 cup semi-sweet chocolate chips 
Directions
  1. Preheat oven to 350°. Lightly mist 18 cups in a muffin tin with cooking spray.
  2. Combine the oats, brown sugar, baking powder and salt in a large bowl and stir until thoroughly mixed.
  3. In a separate bowl, whisk together the egg whites, egg, mashed banana, milk and vanilla. Add to the dry ingredients and stir until blended together. Mix in chocolate chips.
  4. Spoon the oatmeal mixture evenly between the prepared muffin cups. Bake uncovered for 18 to 22 minutes or until oatmeal is lightly browned and a toothpick inserted into the middle comes out clean.
