Ingredients
1 pkg (8.5 oz.) sugar-cookie mix
1/2 cup oatmeal
1/4 cup butter (at room temperature)
2 cups sliced fresh rhubarb (8 oz.)
2 cups quartered strawberries (9 oz.)
3 Tbs. cornstarch
1/2 cup sugar
Directions
Heat oven to 350 degrees. Grease 9" casserole dish. In a bowl, with your fingers, combine cookie mix, oatmeal and butter until large crumbs form. In a separate bow, toss rhubarb, strawberries, cornstarch and sugar; spoon into prepared pan. Sprinkle crumb mixture over fruit.
Bake for 40 minutes or until crumbs are golden brown. Server warm and with some vanilla ice cream. You'll love this dessert!
