- 2 Tbsp butter
- pepper to taste
- 2 cups jasmine or white rice (I like jasmine for this recipe but either works)
- juice of 1 large or 2 small limes
- 2 1/4 cup chicken broth
- 3/4 tsp salt
- 1/4 tsp cumin
- 2 Tbsp chopped cilantro
Directions
- In a large skillet, melt butter and saute with rice for 2 minutes.
- Add chicken broth and the rest of the ingredients except the cilantro.
- Bring to a boil, reduce heat, cover and cook for 20 minutes or until liquid is absorbed.
- Add cilantro during the last 5 minutes of cooking so that it doesn't get too mushy.
