Cilantro Lime Rice

Ingredients
  • 2 Tbsp butter 
  • pepper to taste 
  • 2 cups jasmine or white rice (I like jasmine for this recipe but either works) 
  • juice of 1 large or 2 small limes 
  • 2 1/4 cup chicken broth 
  • 3/4 tsp salt 
  • 1/4 tsp cumin 
  • 2 Tbsp chopped cilantro 

Directions
  1. In a large skillet, melt butter and saute with rice for 2 minutes.
  2. Add chicken broth and the rest of the ingredients except the cilantro.
  3. Bring to a boil, reduce heat, cover and cook for 20 minutes or until liquid is absorbed.
  4. Add cilantro during the last 5 minutes of cooking so that it doesn't get too mushy.
