Chicken Noodles with Peanut Sauce

Ingredients
  • 1 tbsp. oil
  • 12 oz. skinless, boneless chicken breast, thinly sliced
  • 3 c. red cabbage
  • 1 c. shredded carrots
  • 2 cloves garlic, chopped
  • 1/4 c. cider vinegar
  • 1/4 c. peanut butter (or other nut butter)
  • 1/4 c. soy sauce
  • 1/4 c. chicken broth
  • 8 oz. rice noodles or Chinese egg noodles, cooked
  • Chopped peanuts
  • Cilantro leaves
Directions
  1. In large skillet, heat oil on medium-high. Add chicken, red cabbage, carrots and garlic. Cook 5 minutes.
  2. Whisk together cider vinegar, peanut butter, soy sauce and chicken broth; add to skillet along with noodles.
  3. Top with chopped peanuts and cilantro leaves.
